Roasted Pumpkin Seeds...the best part of Halloween, in my opinion!


Pumpkin seeds, fresh from the carved jack-o-lantern...


...covered in olive oil and sprinkled with salt.

Yep, that's my favorite part too! Ok, ok I live for tiny Mr. Goodbars ;) Thankfully, I'm the only one in the family that likes them! They remind me of my grandpa- it was his favorite candy bar! Happy Halloween!

Ooooh! I totally agree! This year though, pumpkin carving stressed me out so the seeds all went to the garbage in the end.. I regret it now though! :)

This is the whole reason that my husband carves pumpkins with our kids! He adds a little bit of paprika to the salt and olive oil...to die for!

I couldn't agree with you more - but have to admit I've very envious of your abundant seed bounty. Our 3 pumpkins didn't yield many seeds. Did you have 100 pumpkins, or is there a great secret in knowing which pumpkins are loaded with seeds - please share! ;)

I'm so sad I didnt get to roast any pumpkin seeds this year! I think I need to go out today and get a few pumpkins just to get the seeds, yes that is what I will do. Your pictures are making me want them right now :)

mmm, I've always roasted mine with butter and kosher salt. You have to roast the seeds first and then add the butter at the end. It's sooo tasty!

Pumpkin seeds are by FAR better than all the Halloween candy.
